Herbal Beverages From Simple to Complex
This one day workshop will explore herbal beverages from age-old recipes as simple as a “simple” of colonial times to today’s penchant for mixology--crafting herbal drinks for good health as well as pleasure. Susan will sort through the confusion of infusions and decoctions, teas and tisanes, shrubs and oxymels, cocktails and mocktails, syrups, elixirs, bitters and more.
She will share some of her favorite recipes along with her most often used herbs for her drinking concoctions. We will taste a number of pre-made potables and then make and sample quite a few of these beverages, which will quench your thirst and curiosity, wet your whistle and hopefully, whet your appetite for creating your own inspired libations and formulations.
Each student will create a shrub, syrup, bitters, and fire cider vinegar to take home. Bring a small box or basket to carry these home in, as well as your favorite herb snippers, a kitchen knife and an apron if you wear one. Recipe handouts will be provided.
Registration is required two weeks prior to class.
Cost of Class
$22 registration fee to Ozark Folk Center upon signing up for class;
$100 fee for class and $30 materials fee, due to the instructor at start of class (cash or check).

Susan Belsinger
Susan Belsinger lives an herbal life, whether she is gardening, foraging, herborizing, photographing, teaching, researching, writing or creating herbal recipes for the kitchen or apothecary—she is passionate about all things herbal. Recently referred to as a “flavor artist”, Susan delights in kitchen alchemy—the blending of harmonious foods, herbs, and spices—to create real, delicious food, as well as libations, that nourish our bodies and spirits and titillate our senses.
She has been blogging regularly for Taunton Press’ www.vegetablegardener.com for the past eight years. Her latest publication The Culinary Herbal: Growing & Preserving 97 Flavorful Herbs co-authored by Susan Belsinger and Arthur O. Tucker—was released in January 2016 by Timber Press. Their new book for beginning herb gardeners and cooks, Growing Your Own Herbs will be released this spring.
