In this one-day class, students will review the basic techniques of fermentation, why probiotics are so good for us and are considered a superfood. Susan loves sauerkraut, which is a basic fermentation, however there are many other tasty and exciting fermented foods from around the world that we will delve into from kimchi, hot pickled vegetables and vegetable salads to flavor pastes and sauces. We will discuss which herbs and spices work best in fermentations.

We will taste all sorts of ferments and then create our own to take home. Each student will make their own Kimchi, Seasonal Vegetable Pickle using a salt brine, prepare a Vegetable Paste like Gochujang or Harissa, a fermented Green Herb Sauce and a Root Vegetable Salad. We will also taste some fermented beverages like water kefir and kombucha.

Get inspired and become a fermentista; it is fun and easy, not to mention healthy and delectable! Bring an apron, kitchen knives (chef and paring), to-go mug or drinking jar) and a sturdy basket or box to carry your goodies home.
