This class is packed full of flavor. Susan loves condiments from the basic ketchup, mustard and mayonnaise to flavored vinegars, pickles, sauces, salsas—they are the finishing flavors to many a dish. In this class we will taste an array of Susan’s favorite condiments and then create some of her must-haves for the pantry and the refrigerator.

We will use herbs and spices in many preparations—to make homemade mustards—after we savor some with crackers and cheese. Susan will discuss the vinegars she uses most often and we will sample and make fire cider vinegar. Garlic will be featured in a medicinal sauce and in a harissa with chiles, which each student will prepare to their own degree of pungency. We will have to make a few salad dressings to taste on fresh greens and of course, the day would not be complete without at least one green sauce to savor. Make space in your pantry and your fridge if you are taking this class because you will bring home jars full of homemade flavorful condiments.

Bring an apron, kitchen knives (chef and paring), a wooden cutting board if you prefer one, to-go mug or drinking jar and a small cooler or box to carry your jars home.

Admission: $22 registration fee to Ozark Folk Center upon signing up for class;

$100 fee for class due at start of class (cash or check please)

Class minimum is 3 and maximum is 8. Preregistration is required two weeks before the beginning of class.
