Total Cost of Class $147 - Which includes $22 registration fee paid here to sign up, (covers your admission to the Craft Village & Heritage Herb Garden). You owe the $100 class fee and $25 materials fee to Susan at the beginning of class. Susan accepts cash, check or Paypal.

Learn about the diverse plants to forage as the seasons change in the Heritage Herb Garden—each season is different—providing us with a variety of wild weeds & tasty edibles. While helping to cultivate the gardens, students will learn to identify & process “weeds” that are good to eat & safe remedies. Participants will experience immersive herbalism while practicing conservation, harvesting, cleaning & preservation. We will prepare & feast upon a scrumptious springtime salsa verde served with seasonal veggies like asparagus & radishes; spring rolls with wild foraged herbs & edible flowers; a conifer soda—& who knows what other surprises we might come up with?! Each student will go home with a conifer syrup.

Bring pruners or scissors, a chef & paring knife & a basket for gathering. We will be outside harvesting, so dress accordingly.

Preregistration is required. Registration deadline is May 16 at 5 p.m.
