Herbs in the Kitchen: Gathering and Preserving the Herbal Harvest

This hands-on class will be an herbal adventure in the height of the herb gathering season. It is designed so that you use the herbs that you grow! We will spend time outside (bring a hat and sunblock, dress accordingly) learning how to prune and harvest herbs in the mornings. We will bring our herbal bounty indoors and proceed to preserve them in different ways.

We will comminute herbs and tie them into bundles for drying. Using seasonal herbs, fruits and veggies, we will create herbal vinegar, syrup and herb butter. We will also make and eat a few seasonal herbal favorites like pesto, chimichurri, herb cheese, herbal soda and an herbal iced tea.

Bring a basket or box to carry your goodies home in, pruners or garden scissors, a kitchen knife, and apron if you wear one, and a go-mug for beverages.
