Ozark Folk School Herbs: A Unique Sensory Experience all about Flavor

Herbs give us pleasure through all of our senses from rubbing the leaves to release their aromas to smelling and tasting them. Herbs delight us through sensory experience providing us with lovely fragrances and gustatory pleasures.

In this two-day class, we will use fresh and dried herbs to learn about smell, taste and the six flavors: sour, sweet, salt, bitter, pungent and umami. We will explore these flavors singly and prepare a dish featuring each flavor. During this hands-on class, we will create a few flavorful herbal blends to taste and take home: Gomasio with sesame, seaweed and sea salt; Umami Medicinal Mushroom Powder a blend of dried mushrooms, herbs and spices; and Chimichurri Sauce using fresh green herbs, garlic, chiles, vinegar and oil.

This class will expand your herbal horizons—and change your way of thinking about cooking—you will never smell, taste or cook quite the same! Bring an apron, your favorite chef and paring knives, a go-mug or glass jar for drinking from and a small box or basket to carry a few items home. Recipe handouts will be provided.

Registration is required two weeks prior to class.

Cost of Class

$43 registration fee id due to the Ozark Folk Center upon signing up for class;

$200 fee for class and $50 materials fee, are due to the instructor at start of class (cash or check please).

Susan Belsinger

Susan Belsinger lives an herbal life, whether she is gardening, foraging, herborizing, photographing, teaching, researching, writing or creating herbal recipes for the kitchen or apothecary—she is passionate about all things herbal. Recently referred to as a “flavor artist”, Susan delights in kitchen alchemy—the blending of harmonious foods, herbs, and spices—to create real, delicious food, as well as libations, that nourish our bodies and spirits and titillate our senses.

She has been blogging regularly for Taunton Press’ www.vegetablegardener.com for the past eight years. Her latest publication The Culinary Herbal: Growing & Preserving 97 Flavorful Herbs co-authored by Susan Belsinger and Arthur O. Tucker—was released in January 2016 by Timber Press. Their new book for beginning herb gardeners and cooks, Growing Your Own Herbs will be released this spring.
